Lightly pressed, racked to high turbidity, and wild fermented in neutral barrels. Aged on lees in barrel for 9 months with occasional stirring. Unfined.
Tasting Notes: Meyer lemon pulp, white grapefruit and citrus blossom layered over white nectarine and white peach. Exotic notes of kaffir lime, cardamom and fresh ginger. Taut and energetic palate, driven by vibrant, singing acidity. A delicate texture gently wraps around the fierce acid line, with a subtle touch of residual sugar that adds a hint of volume and generosity without any perception of sweetness.
